Since I spend at least 2 months a year in Yamagata, I think I know how to spell Yanazawa.

I think Red sky is a breath of fresh air in a usually stuffy barrier island environment. The food is outstanding. Nothing can be perfect but what is cooked there is well cared for from food locker to table.
Maybe if this critic was actually qualified to review restaurants some of his statements might mean something. As you can see from his article(although well written) his experience with steaks is severely lacking. A ribeye is never recommended to be ordered rare, the cut simply does not lend itsel to being enjoyed at that temperature, it must reach a medium rare temp to help break down the fat to make it more enjoyable to the palate. Only Kobe styles of ribeye like Yamagata, and Yanazawa beef can be served at the rare temps and be more than enjoyable.
