Italian Wine Dinner

Laura Alberts' new executive chef Matthew Brigham is preparing a four-course dinner filled with a delicious mix of light and dark flavors inspired by Italian wine. The wine featured comes from Dedicato Imports, owned by local physicians Sam Franklin and Brett Baker. Diners start off with a frisee caesar salad with garlic crostini, poached egg, bacon lardons and parmesan tweel. Savor the last tastes of summer with the second course, a pan-seared grouper with fennel, watermelon, and tomato salad and white bean puree. A seared filet of beef topped with proscuitto, black olive tapenade, pomme purre ravioli, au jus and patty pan squash finishes off the entreés. For dessert? An espresso panna cotta with Grand Marnier zabaglione.
