Matching flavor profiles can be like breaking a code. A lager with pork? Or would a cider complement the taste more? It’s a good thing we have the Island Brews and Chews Craft Beer Festival to handle all that for us. The festival pairs specialty craft beers from nine different local and regional breweries with food selections. Wild Dunes’ director of food and beverage Thomas McKinney-Stehr created the event, and since he grew up in Germany, beer might as well be a second language to him. “First, the 18 beers were chosen, and then our chef prepared the foods to cater to the specific beers,” he says. A ticket will get you unlimited food and beverages, but these aren’t your regular festival foods of corn dogs and funnel cakes. Some of the match-ups include the Brooklyn Post Road pumpkin ale with Westphalia ham and mascarpone mac and cheese, a Palmetto Amber with a wild mushroom ravioli and pulled smoked chicken in a brown butter sauce, and the Thomas Creek Castaway chocolate orange IPA with a flourless chocolate cake with candied pecans. In between tastes, guests can play corn hole, table tennis, or bocce ball.
