The executive chef shuffle at Indaco is hard to keep up with — currently, former sous chef Michael Holler at the helm. The food, though, well we dream about it. The black pepper tagliatelle is drizzled in nature’s sauce — a perfect egg yolk. And the Neapolitan style pizzas? The little neck clam pie with garlic, oregano, lemon, sea beans, and Parm is supposed to be shareable, but you’ll want the whole thing for yourself. —Kinsey Gidick (Dish, Winter 2019)
