French wine specialist Antoine Collet from the Kobrand Corporation will be on hand to explain the wines that will be paired with a menu crafted by Executive Chef Lee and Sous Chef Tim. The menu will feature buckwheat bilini, Calico Bay scallops, duxelles crusted Scottish salmon, braised venison short rib, and port wine poached pear.
