Carolina Brewery Special Cask and Omakase Dinner Staff Pick

During Charleston Beer Week, Chef Sean Park will be pairing a five-course Omakase — which translates to “chef’s choice” — dinner with cask-conditioned ales from Carolina Brewery. The dinner has been in the works since March and Chef Park is still working on the menu, tracking down interesting ingredients from around the world. Known for his super-fresh sushi, Park serves up live scallops and uni (a.k.a. sea urchin) at Kanpai. During the dinner Park and Michael Kroll, a Carolina Brewery rep, will introduce each course and explain how the chosen beers pair with the dishes. The beer is unfiltered and unpasteurized and has conditioned over time in a cask along with Asian spices and fruits to help enhance the flavor. The paired beers are listed below Course one: Sky Blue golden ale cask, with yuz and kaffir lime leaves. Course two: Super Saaz imperial pilsner beer cocktail with lemongrass. Course three: Copperline Amber cask with fuji apple and thai basil. Course four: Flagship English-Style IPA cask with ginger and wasabi. Course five: Oatmeal porter cask with bird's eye chili and serrano pepper.
