All up and down the East Coast divers and chefs have teamed up to stop the spread of the lionfish, a voracious intruder from Asia. And they're doing it in a novel way: by eating it. Here in Charleston, Drew Hedlund at Fleet Landing served potato-encrusted lionfish over braised purple cabbage for Restaurant Week, and Ken Vedrinski of Trattoria Lucca tried to feature it in a special four-course, wine-paired meal for Slow Food Charleston (apparently lionfish weren't biting that week). And Hedlund has a lionfish theme planned for the next Sustainable Seafood dinner. Now if they could just come up with a kudzu-themed dinner.
