Not for the faint of heart, chitlins (or, more academically, "chitterlings") are strong fare, to put it politely. A deeply traditional Southern dish, Carolina-style chitlins — made from well-cleansed pig intestines — are nothing fancy. In the funky little pink-painted building on Morrison Drive, restaurateur Martha Lou Gadsden serves her chitlins every day. Travel Channel clown Mark DeCarlo featured Martha Lou's chitlins on an episode of Taste of America, which covers regional cuisine around the U.S. Not overly-seasoned, they're bite-sized and served in a basic broth — tender and soft with a pronounced wet clay earthiness in aroma and flavor. Suggested serving: mix in some salty collard greens, white rice, and a ton of black pepper and Texas Pete — it's a mouthful of the Deepest South.
