Charleston has found its way to some great food in this day and time. The town has staples and the town also has those eats that simply open and close. Too bad Mr. Bourdain could not have experienced the Charleston of 30 years ago. The likes of great prepared food then along with the locals such as the Chili St. Bernard at the local King street pub.

The folks on this episode kept referring to the food as southern food. Anyone from South Carolina, including myself and even Georgia folks will correct you Mr. B. This show was about Lowcountry southern food. THERE IS A DIFFERENCE. Also, I don't know who the guy was that explained how southerners during the textile years became accustomed to getting away from rich southern food by way of tv tray meals but he could not be further from the truth. Where was Johnny on the spot to correct this fool. Sure, everyone pops fish sticks in the oven from time to time. They are an American staple just like the tater tot; HOWEVER, growing up in a textile community, especially the likes of upstate SC towns such as Greenwood, Anderson, Greenville and all the spots in between would shed a different light. Many a dish of low country GA brunswick stew, hominy, fresh garden vegetables, fresh fish, farm raised chicken, fresh sour dough bread, many kinds of leaf lettuce, pit cooked and roasted meat, the list goes on and on. All of this from the gardens in rows between those mill houses or on properties and farms in the county owned by the mill workers families. Unlike the pretentious draped man on this show, we don't bring fat wallets and fat know it all attitudes to the table. We simply bring southern food tradition, including lowcountry, and a willingness to share a space at the table no matter what color and background each of us may be. Talk about THE experience. No one cares about the credentials and what you know to be better or otherwise.
