I was out of the office last week visiting family in the Pacific Northwest, so forgive me if you’ve heard this one already: soon you’ll be able to eat toast while shopping at King Street’s forthcoming Club Monaco.
Georgia star chef Hugh Acheson — owner of Savannah’s The Florence, Athen’s 5&10 and The National, and Empire State South in Atlanta and known for his Top Chef appearances — is partnering with Chris and Nicole Wilkins of Root Baking Co. on a new cafe, Root + Spiller, which will sit inside the high-end clothing store at 258 King St.
Chris, who worked with Acheson previously, launching The Florence’s bread program, says, “Since meeting Hugh in Athens, Nicole and I have long had a tremendous amount of respect for his skill, thoughtfulness, and humility. We’re excited to be working with him as well as his partners in Spiller Park — the enormously talented Dale Donchey, and Steven Grubbs — who will be instrumental setting up the coffee and wine/bev program respectively.”
We expect to see Chris’ much lauded bread in addition to pastries, coffee, beer, and wine on the menu in the same vein as Acheson’s recently opened Spiller Park in Atlanta’s Ponce City Market. Eater also reports that shoppers will be able to access Root + Spiller via a separate entrance that will also have garden seating. An opening date has not yet been announced.
