Westbrook Brewing Co. has a rep for experimental ales — reinterpreted Belgian styles, in particular. The light and hazy White Thai is seasoned with fresh herbs, spices, unusual grains, cocoa, and fruits. Owner and head brewer Ed Westbrook hopes to use some new hops and barley malts produced in North Carolina sometime soon. In the meantime, he enjoys finding local ingredients for specialty beers. Westbrook donates their spent grains (after the mash), hops, and yeast to several local farmers to feed chickens and livestock. —T. Ballard Lesemann
