Local restaurateur Sal Parco brings his own distinctive touch to traditional Mexican cuisine at Uno Mas. The big quesadillas, enchiladas, and taco platters are a step above your average Tex-Mex, and entrées like pumpkin-seed crusted chicken and roasted pork in a green tomatillo sauce plus creative specials like duck enchiladas with a poblano crema sauce keep things fresh and interesting. There are plenty of nice little touches, like the pinto beans in their rich, meaty broth and the fresh guacamole, which is crushed by hand in a molcajete and goosed-up with lime-marinated shrimp and mango salsa. The margaritas, made with a tangy blend of citrus juices, are the best East of the Cooper, and — paired with a basket of hot tortilla chips and slightly smoky salsa — they are a great happy hour bet. —Robert Moss, Dish (Summer 2012)
