The Sprout is the only raw, vegan restaurant in the state, and they take their mission of providing organic, energy-sustaining foods seriously. Most items on the menu spend days in the dehydrator, compacting all those vitamin-rich vegetables into edible formations. Many of their patrons wander in after a workout from the Eco-Fitness next door for protein-powder-infused kale, cucumber, and apple smoothies or travel for miles for a taste of their raw pad Thai. Try the mushroom veggie burger and live granola. Of course, if you can stand it, a trip to a health food restaurant wouldn't be complete without a wheat grass shot. Sprout uses wheat grass, homegrown on their back counter, so potent that the taste of lawn clippings will stalk your mouth for as long as it takes those enzymes to digest themselves. A second location on King Street brings mock tuna sandwiches and tabouli quinoa to the health-conscious crowd downtown, and there's a grab-n-go counter at the Mt.
