Here in the South, we take our meat very seriously. In particular, we’re pretty partial to barbecue. But the Smoke on the Harbor BBQ Throwdown could make you rethink your barbecue standards. The throwdown is a two-day competition with samples, live music, a cocktail competition, and a food drive for Lowcountry Food Bank. But if you think this will be an ordinary fight for the title of best barbecue, it’s not. Matt Galvin, who handles special events at the Charleston Harbor says, “One of the most significant enhancements to this year’s competition was securing national sanctioning by KCBS, Kansas City Barbeque Society. In addition, we have a barbecue pitmaster from the hit TV show BBQ Pitmasters on Discovery Channel.” Barbecuers will compete in a number of categories including chicken, chicken wings, pork, pork ribs, and beef brisket. While not all the judges are KCBS certified, they will abide by the judging regulations. And some of the rules just seem cruel, like this one: “Judges shall not lick their fingers while taking these samples.”
