Rio Bertolini (a.k.a. Brian Bertolini) is the fresh-cut pasta maker of Charleston. More than 60 restaurants sell his ravioli, fettuccini, and pappardelle. He has new flavors and cuts of pasta all the time, and most of the items on the chalkboard by his stand at the Marion Square farmers market are usually crossed off by closing time. Five Loaves Café tops Rio Bertolini gnocchi with a creamy goat cheese sauce, golden raisins, and a balsamic reduction. If people miss the downtown and Mt. Pleasant farmers market, a selection of his products are also sold at the King Street location of Bull Street Gourmet and at Ted's Butcherblock. Bertolini gets points not only for taking the time to craft all his pasta by hand, but for his innovative gourmand concoctions. The pasta company also makes take-home and family-size portions of manicotti and lasagna, as well as sauces like sage brown butter. —Alison Sher
