It's a long drive out to Seabrook, but so what? Real foodies will do whatever it takes to track down good food, and Chef Matt Bolus' creative fare is worth finding. We especially enjoy his inspired appetizers. With a seasonal menu that has impressed us in the past, it's clear that Bolus should be contending for top honors in this town, if only he could garner more attention from his Seabrook Island perch. Nonetheless, he grows a little garden patch out back, serves up local, fresh ingredients in very creative ways, and has cultivated enough of a loyal following to keep his head above water way out there. In fact, the food is so good, and the drive so scenic, that it's worth going out of your way to find. With affordable prix-fixe menus on the weekends and elaborate seven-course wine dinners headlining this spring, there should be no reason to miss out on Red Sky. —Jeff Allen, Dish (Winter 2010)
