Piña Colada

For the finale cocktail for the Edmund's Oast Beer, Wine+Cocktail Dinner during the Charleston Wine+Food Festival, guest bartender Micah Melton of Chicago's the Avery mixed up the Piña Colada [El Bulli], a tall martini glass half-filled with a thick white mixture and topped with a huge ball of cotton candy, over which the server poured fresh pineapple juice. The cotton candy dissolved away, leaving a sweet pineapple-infused liquid. Hidden inside were tiny orbs of gel filled with Gosling's, which exploded against your tongue with flashes of dark rum. My brain is still reeling.
