You might say Joe Raya is a bit obsessive about his cocktails. After all, he’s got a Clinebell CB300x2 in the back of the Gin Joint. Created to freeze water for ice sculptures, the Clinebell produces a flawless, crystal-clear, 300-pound block of ice, which Raya and team lift from the machine with an engine hoist and carve into hunks and chunks with chainsaws, Japanese handsaws, and ice picks. One sip of his splendid cocktails, and you’ll agree it’s worth the effort.
