Jason Houser left the kitchen at Muse, where he'd made a name for himself as executive chef, to strike out on his own. He started Meathouse, an artisan butcher shop that lives by the motto: "happy animals, happy food, happy people." He buys and breaks down one heirloom pig a week, crafting artisanal bacon and a whole host of sausage varieties. At the Saturday farmers market in Marion Square, he sells his creations, including local lamb along with different cuts of pork, from shoulder to chop. Expect him to sell out of the bacon by noon, but if you're looking for an equally beguiling treat, get the all-beef hot dogs. You won't go back to Ball Park Franks. Ever. —Stephanie Barna
