This hidden gem of Charleston tops the list of any serious foodie working their way through town. Perhaps it’s the quiet, out-of-the-way location that makes it such a find, but Chef Marc Collins, who years ago spearheaded the creation of the Charleston Wine + Food Festival, puts out one of finest meals in town. He employs a lighter style, intentionally downplaying the richness that so many others use to define excellence, replacing it with haute cuisine that is, dare we say, healthy. He’s not afraid to invoke the virtues of molecular gastronomy alongside a farm-to-table ethic. But the best thing about Circa?
