Bartender Judd Clary calls the Chill and Grill a puke in the front, piss in the back establishment. Although he's exaggerating — we're there often and have not witnessed any involuntary evacuations — the Grill is indeed a dive. Stroll in around 1 a.m. on any weekend night, and you'll have to carve your way through a shoulder-to-shoulder crowd of Fourth of July-style revelers. Come up for air, and you're knifing through a thick haze of burnt tobacco residue. It's the way it used to be. Since reopening the old Folly haunt last fall, Clary's built the Grill's reputation as a musician's collaborative. From the Hawkes (a reunion of former members of Dunzip) to Jupiter's Garden, the Chill and Grill has become a birthing ground for on-the-fly musical partnerships that last long after the smoke has cleared.
