The three dark red cubes of ice in Jayce McConnell’s Red Wedding cocktail aren’t there to look pretty. They’re the key to a drink that evolves with each sip. A blend of Elijah Craig bourbon and herbal Averna Amaro, it starts off stiff and bitter, but as those cubes melt the drink evolves into a sweet, floral-tinged delight. Those ice cubes, it turns out, are frozen sweet tea infused with hibiscus and thyme. A crafty cocktail indeed.
