When you're looking for a refreshing cocktail without a potent kick, the Pimm's Cup is where it's at. Pimm's No. 1 is a concoction made from gin, herbs, and spices and is the color, appropriately enough, of iced tea. At home, we go low-rent and mix it with ginger ale for an easy drink, but if you really want to see how it can be done right, head to Edmund's Oast where they make it with Cannonborough Beverage Co.'s Honey Basil soda and serve it over lots of ice with a cool sliver of cucumber. It's lip-smacking and you can drink a few without getting gobsmacked by your own drunkenness.
