There's been a resurgence of bitters in the local bar scene over the last year or so — from the popular Angostura Aromatic Bitters to the more exotic varieties from Fee Brothers, Peychaud, and Bitter Truth. Some are woody and spicy, and others are sweeter and more floral. Top mixologists know the that the role of bitters in cocktails is to be subtle but assertive. Some of the more experimental downtown bars brew their own housemade bitters using roots, herbs, bark, and dried fruits to accent and enhance the flavors of signature cocktails.
