A couple of places around town serve their Cuban sandwiches with a cup of mojo criollo, the stuff you find in the Goya bottle on the grocery store shelves. But that's the equivalent of using a bottle of Kraft Italian dressing in place of a freshly made vinaigrette. At El Bohio on James Island, the fresh mojo is a distinct pleasure. It's made with equal parts fresh-squeezed orange juice, fresh-squeezed lime juice, and olive oil and then seasoned with cumin, fresh garlic, oregano, salt, and pepper. As owner and chef Vanessa Harris says about her creation, "Simple, yet highly addictive." It's a mouth-watering addition to anything on your plate, from beans and rice to tostones and fried yuca.
