One time, we ended up at Husk for a friend's birthday celebration, and they put a big bowl of fried beef tendons on the table before us. The bowl was huge. The six of us at the table skeptically sized it up, figuring there was no way we'd be able to eat all that (in addition to all the other food we'd ordered). But then we started eating them, and the bowl quickly emptied. Like a cross between popcorn and pork rinds, beef tendons are an amazing puff of meaty airiness. Hard to describe. Easy to eat.
