What a year or two it's been for food trucks. We went from having a handful of taco trucks up near worksites on Ashley Phosphate and Remount Road to having a cadre of gourmet trucks, rounding themselves up into a bona fide federation. Roti Rolls has been at the forefront of the scene, making a name for themselves by filling their rotis up with local and creative ingredients — like whole snapper, beet rice, and pickled daikon. Can you say yummy?
