Brooklyn Brewery’s veteran brewmaster Garrett Oliver knows how to make the case for pairing good beer with the flavors of great food. Fortunately for Charleston’s beer scene, he elegantly argued on beer’s behalf even more than expected during the beautiful, six-course beer dinner prepared by Executive Chef Derek Falta. While presenting six styles from his brewery — including their new specialty ale, Brooklyn Sorachi Ace — Oliver noted that beer has a wider range of flavor than wine does, is more versatile in many ways, and has the advantage of being well carbonated (“scrubbing bubbles to cleanse the palate”).
