Kyle Hinton of the Palmetto Chef in Summerville introduced a work of barbecue genius with his deep-fried pulled pork hushpuppies: racketball-sized orbs of tender, smoky pork barbecue dipped in cornmeal batter, fried a golden brown, and served with barbecue sauce for dipping. Alas, the rest of the world was too slow in noticing, and the Palmetto Chef closed its doors last summer, leaving the pulled pork hushpuppy just a fond, tasty memory.
