Amuse, the most underrated gem west of the Ashley, deserves more diners on a typical night.Out in a somewhat bleak strip mall, they keep a very loyal following coming back for more. You don't get that kind of loyalty without great food, and the Trez family delivers such delicacies as marinated white anchovies and a soul-satisfying spaghetti Bolognese. Innovative tapas are perfect for a quick bite on the run or for a three-hour feast that reaches deep into the well-appointed wine list. There's baby octopus and duck confit, beef carpaccio and ceviche, and everything in between. We like to go on a rainy winter night, when the crowd stays away and we can have the full attention of the kitchen all to ourselves. —Jeff Allen, Dish (Summer 2009)
