The differences are no bell peppers, thyme, raisins or almonds in my recipe. Raisins and almonds are often used, my family just doesn't. I do add hot peppers (finger or Thai green) and ginger.<br>

Between my family recipe, this dictionary entry for "Country Captain" (<a href="http://www.bibliomania.com/2/3/260/frameset.html" rel="nofollow" target="_blank">http://www.bibliomania.com/2/3/260/framese&hellip;</a>) and this history (<a href="http://whatscookingamerica.net/History/PoultryDishes.htm" rel="nofollow" target="_blank">http://whatscookingamerica.net/History/Pou&hellip;</a>), I think it is safe to say that the dish was created and even named in India and brought to Georgia first in the early 1800s.

      <![CDATA[Er1nya, they offered up their boiled peanut ice cream a year ago or so at a local festival and it was pretty terrible.  I love some boil'ds but making an ice cream out of it just doesn't work.<br>
<br>
On another note, I am a 5th generation Charlestonian and have never heard of "Country Captain".  Not bashing the dish or making any claims about it, but i would be hard pressed to say that it is a classic Charleston dish.

      <![CDATA[My best 15 years were spent in Charleston and my 3 kids were born there.  Had to move away for business but can't wait to return.  Never ever had better food and I am a southern girl, but NEVER heard of this Country Captain.

      <![CDATA[My three kids were born in Charleston. I am originally from Virginia.  We lived in Charleston for 15 years and have lived in many major cities over the past 20 years.  Charleston and SC in general has the best food ever created.  NEVER heard of this County Captain!

      <![CDATA[Just got back from spending our 20th wedding anniversary at Folly. I know the locals hate tourists, but considering we've spent our last 15 fall vacations eating burgers while watching baseball at Planet Follywood, getting plastered with the locals to the Skynyrd tribute bands at the Sand Dollar, screaming at the Football game at Snapper Jacks, the Hideaway, the Sandbar, and the Roadhouse, we sorta consider ourselves adopted locals.<br>
<br>
That being said, we've seen places come and go over the years. We were glad to see the changes in the replacement of Conch and Terrapin with more down home and reasonably priced places.<br>
<br>
We hit Rita's and Center St. Kitchen and came out fat and happy every time. Rita's has great burgers, quesadillas and the best BLT. Great drink deals and plenty of TV's for watching the games. Clean and friendly. Melissa, our rockin' waitress with the cool guitar pick earrings: you are great!<br>
<br>
Center street was the cheapest dinner bill and awesome down home food. Meatloaf, grits and collards. Baked Pimento cheese and Andoulle was great too. Great waitstaff and hostess. <br>
<br>
These owners are hands on and really appreciate our business.<br>
I'd say John has the kinks worked out just fine.<br>
