Re: “How John Lewis gets his Texas Hot Guts sausages to snap

just to hope I was not talking out my ass I visited Lewis BBQ today. as i would not stand in line for anyone's cooking i drove on a rainy Sunday to do it. even then I waited 15 minutes behind 8 people to order. the line isn't about the quality of the food it is about the lack of ability by the front of house.

as i sat in line i looked around and thought of the irony that this smokehouse is near Romney street and all i saw was a bunch of white people who looked like they came from the beach and golf course. not those who will help you make it through the winter months.

as a cook for over 20 years, 10 of them here in Charleston, let me say this. it's fucking meat. the brisket? not mouth watering. and i even asked for an end cut to get the "smoke". beyond that the "hot guts"? yeah, kielbasa with more heat than is comfortable.

this will be a nice space for a rave club when it sucks "Home Teams" exhaust and closes. i don't know about Home Team, but a homegrown franchise gets my vote over some dude with a bunch of press we have seen since they started welding their cookers so many months ago.

Austin? hope it's music is better than the food hype. BTW. Ask Chicks Fry House and it's Beard award winning founder about gentrification on the neck..
