That's very nice. But is it really that customers aren't invited to give honest cash to the cooks? If a 6-pack of beer is a legal gift, wouldn't a small pile of Lincolns be OK?
I'm all in favor of getting away from the front-of-house tipping system. I know servers think they work hard, but for my 20%, most of them are living the life of Riley. I'd rather see them working at a straight hourly rate, with the good ones getting a higher wage. Knowing that a waiter makes $35K is disheartening when cooks get minimum wage.
So they squall. "We have to get a bunch of money when we're on the floor because we only work 6 hours." Well, the paradigm can shift. Staff could work 8 hours apiece at a rational wage - best-qualified/paid people can serve up front and prep salads when traffic is slow.
