I agree with the above comment. LOTS of good seafood on IOP.
Why not have the truck vendors approach a shopping center with a large parking lot. They could police it like the market downtown, with limited space available. The owners of the lot would recieve a fee from each truck. There would be specific hours of operation, proof of insurance, cleaning up behind themselves, etc. THEN someone could come to the parking lot and choose their menu for lunch.
