Raw milk is a uniquely safe product because it contains multiple, redundant systems of bioactive components that can reduce or eliminate populations of pathogenic bacteria. During pasteurization, milk is processed until it becomes a deadened product, and all these beneficial systems -not to mention nutrients- are destroyed. What's left is an inert and insipid liquid with no ability to fight off the most common pathogens that are found in food. You are more likely to get sick drinking pasteurized milk than you are from drinking raw milk from a responsible farmer.
