Dear Sad,
I don't know what your experience is in general or what it was the other night but I can say that I've been eating out in this town for 20 years and in the last 4 years, I've eaten at FIG more times than I've eaten everywhere else combined. That being said, I have slowly come to understand what the Chef is trying to express through his food. There's a subtletly in his culinary genius...lying in his ability to isolate and magnify each ingredient's individual flavor. Some chefs, create a recipe and then shop for the necessary components. But if you order enough items on Chef Lata's menu on any given night-whatever the season may be- you'll understand that the ingredients themselves inspire the palate behind the menu. Over the past few years, his attention to detail and use of the freshest most sought after local ingredients has taken FIG's food to a new level. Every night's menu is like an album. Listening to a song here and there and then thinking you understand what the artist is trying to say is juvenile and small-minded. You might reconsider the way you put your dinner together given the many choices. Ordering is an art of its own!
