Charleston’s eclectic little oyster bars have big chalkboards, listing a great selection of fresh oysters. Both locations will shuck ’em fresh and serve them with your poison of choice, from champagne to beer to an ice-cold martini. Slam back an oyster shooter — Absolut Peppar, oyster, spicy horseradish, black pepper, and lemon — and peel open a pile of chilled shrimp for a satisfying raw bar experience. The ice cold oysters on the half shell come from the waters around North America and are served with mignonette or cocktail sauce, whichever you prefer. And if you’ve got some landlubbers with you, let them graze on the Angus burger or a New York strip and have an equally enjoyable bar experience, without the raw. —Jeff Allen Dish (Winter 2013)
