Or what about Berkshire pork, heirloom pumpkin, burnt honey, and black truffle? Your guess is as good as ours. There’s no shortage of passion, skill, wit, and whimsy in evidence here. The kitchen — a veritable laboratory where vinegars are aging, meat is curing, and plenty of things are fermenting — continues to blow minds with menu options that change daily. Their creativity is unmatched. Diners are encouraged to pick dishes and craft their own tasting menu (four courses for $65). You can go a la carte, choose a three- or four-course option, or opt for the seven-course chef’s tasting menu.
