Eat This Tonight: Cauliflower takes center stage

Pinterest fiends and veg-heads alike have probably noticed the abundance of side dish cauliflower recipes sprouting all over the place. Well they're showing up on menus all over town, too. If you're craving a new take on the veg (one that's sans ranch dressing), we've got you covered.

According to Instagram, The Palace Hotel currently has a cauliflower taco ($4) which comes with malt vinegar tahini, toasted pistachios, and salsa borracha. 

Charleston Grill serves a mean cauliflower side. The veg is roasted with a mouthwatering blend of capers, lemon, thyme, dates, and brown butter for $10.

The warm cauliflower sformatino ($12) is a staple at Trattoria Lucca. With a consistency somewhere between custard and soufflé, it is steamed for six minutes until it is nice and airy and is then topped with parmesan cheese, and a mixture of anchovy oil, garlic, and pepper. This side also boasts a farm fresh egg that oozes out of the center and onto your plate.

Another side dish favorite can be found at Georgean’s Caribbean Soul restaurant. The cauliflower mash is a creamy combination of cauliflower, russet potatoes, sour cream, butter, salt, and pepper. CP reviewer Eric Doksa said Georgean's mild curry chicken goes hand-in-hand with the cauliflower mash. "Joining the two in holy matrimony is something you're going to want to experience more than once — it's a match like no other," Doksa writes. Like all of Georgean’s sides (not including the macaroni and cheese), mash is priced at just $1.50.

If you’re looking for a unique vegetarian option at one of Charleston’s fine dining establishments, try the truffled cauliflower steak ($24) at 82 Queen. Unlike the previous recommendations, this dish is served as an entrée. The truffled cauliflower comes with an assortment of rich ingredients such as mushroom pilaf, herbed tomatoes, cheddar and parsley butter, and fried capers.
