Rarebit crew taking over Big John's operations

John Adamson of the Rarebit says he is partnering with Ryan Condon at Big John's and will be taking over operations.

Two weeks ago, we reported on the demise of the Green Door and the expulsion of its proprietor Cory Burke, who made a deal with the previous management team to take over Big John's without the knowledge or approval of Condon, who wants the bar to return to its status as a neighborhood watering hole. Apparently, the whole situation was a big mess of miscommunication. 

Condon and Adamson are connected through mutual friends and recently reached an agreement to partner on Big John's. "It's a fifty-fifty situation," says Adamson, who is good friends with Condon's son-in-law. "Ultimately, he found me. That's the connection."

Adamson says they changed the locks and closed the doors today. He expects renovations to take between four and eight weeks. "But you never know what you'll find in these hundred-plus-year-old buildings," says Adamson.

Chef Brannon Florie will be in charge of revamping the menu. "He'll help out with setting the kitchen up and doing what he does," Adamson says. And what Florie does very well is classic comfort fare. At the Rarebit, he's established an easy menu that's hard to resist with stacked burgers, patty melts, and grilled cheese sandwiches. Expect a similar approach to Big John's. 

Adamson seems to be a good choice to run Big John's. He opened the Rarebit last December and says he's been very pleased with its success, with numbers 30 percent higher than what he projected.

"I had some numbers, but you know, I did as much calculating as i could, but really I was just trying to make a place that was comfortable to me. So, the fact that other people like it too is flattering."

Adamson confirmed that he's got yet another project on the horizon but wasn't ready to release any information until more details are worked out.
