There's a new cat in town, or should we say bull? Bull Street Gourmet’s Justin Croxall is preparing to launch his own Pinot Noir creation, appropriately named Aurox, ancestor to the modern bull. Completely separate from the Bull Street private label, Aurox has been a project of Croxall’s since 2011, and the first cases are set to touch down in Charleston by the end of March.

“A true food wine,” says Croxall. Aurox will be available at local eateries like Husk, McCrady’s, and Charleston Grill, and on the shelves at both Bull Street Gourmets.

Croxall has been working with winemaker Darcy Pendergrass of Amity Vineyards in Oregon's Willamette Valley, and the result sounds very drinkable. “It has notes of black cherry, raspberry, and cranberry with undertones of mushroom and forest floor.” Not sure what the forest floor might taste like, but Croxall assures us that it's an “old-world style of Pinot Noir, similar to burgundy.”

The labels have just been approved, and they will be shipped out to Amity by the end of the month in order to get the cases turned around quickly. The target release date is mid to late March, so keep your eyes peeled for the red bull on the label.
